Preparation, Bake time, Moistness and Taste, and Sweetness.
The only part that was a hassle was melting the butter. Then I had to wait to add it to the mixture until it was somewhat cool so it wouldn't cook the eggs in the dish.
Long bake time-350 degrees, 55-65 minutes.
I put a fork in it before the time was up, and it came up clean.
I took it out of the oven and frosted it. Unfortunately, when I ate it I realized it was not done because the center was mushy. However, my family and I still ate it. Nevertheless, we are all still alive today, to tell the story.
Moistness and taste:
It was fine to eat, except for the un-cooked spots in the dish (that were my fault.) It was not as moist as I would have liked it to be. My mother for instance, makes much moister and tastier pumpkin bread.
I did not think it was sweet enough, even though I added an extra 1/2 cup of sugar.
Cream cheese spread
I did not make the cream cheese spread that was suggested on the "Pumpkin Gingerbread Mix" box.
When I read it, it didn't sound that good to me. Also, I am not a fan of gingerbread, although I do like pumpkin bread. To me, the ginger frosting on the ginger bread Pumpkin Bread would just be too much ginger flavor. The part in the instructions about adding regular granulated sugar left me wondering if the spread would taste grainy.
Homemade Frosting, and my opinion.
I decided to make my own frosting instead:
whipped cream cheese
(I don't know the amounts in this recipe because I just estimated it.)
The frosting tasted good ,and we all put a ton of it on our Pumpkin Gingerbread.
I probably would not buy it again because I would rather try to make homemade "Pumpkin bread," instead of using a mix with added ginger. It tasted all right and was definitely eatable, but I can think of other deserts that I would rather have.
For not being very crazy about it, my family and I ate the w h o l e thing! (Good thing we didn't really like it.) The frosting added a lot of sweetness to the "Pumpkin Gingerbread." In fact, none of us felt too good this morning, as we ate too much of it. I would give it a six, on a 1-10 scale.
