A German word that accurately describes this wines top rated juices as Eisweins. The character of these wines is its all around sweetness and fruity flavors as they were infused in honey. As our Canadian neighbors wines excel in quality that so far has put them above its European counterparts.

2012 Inniskillin Vidal Pearl Ice Wine– Ontario, Canada

The name Ice wine comes from the German word Eiswein, a name inspired for a wine that shows off its grapes on a frozen state in its vines.
With many nations across the globe, that produce this wine ranging from Germany, Spain, Croatia, Moldova, Poland, Hungary and Austria to name you a few.
This time my story will focus on a one of a kind Ice Wine in the New World, focused on our neighbors to the north, Canada.
Our cousins from the Maple Leaf State are known for their all-around production of Ice wines, a sort of dessert wine that’s great to pair with an array of sweet delicacies and cheeses.
It’s where our friends from Inniskillin Wines show off the fruits of its labor, especially to create a masterpiece in this honey sweet wine.
Located in the Niagara- Lake Ontario region in Canada, this Estate was founded by Austrian entrepreneur Karl Kaiser and its Canadian partner and counterpart in Donald Ziraldo.
This Estate has become a leader in the production of this sweet beauty, were it excels in its quality and thanks to its one of a kind climate that’s necessary for its production.
A varietal in the Vidal is in need of below freezing temperatures by law in Canada −8 °C (17 °F), or measurements that in weight is required in Canada is 35degrees Brix (grape sugar amount).
That relate to the measurement of corresponding to 153.5 °Oechsle, these wines are way different than its white or red counterpart’s, that with a little freeze their harvests are considered a loss.
Another fact in these wines is the process of pressing the grapes is by freezing them in order to extract their juices coming out of its ice crystals, being dubbed as the Cryoextraction.
Still this delight of a wine can really shows of a nice nose or bouquet with a tropical parade of fruits of the likes of mango, apricot, peaches and honey.
Your palate will experience and show off a nice marmalade in fruitiness of ripe peaches, apricots and overtones of brown sugar.
And although this wine is not a bargain, its honey drops and occasionally some acidity, will leave your palate satisfied with its taste and with a 9.5% of alcohol contests, it’s worth every cent you paid.
In the dinner table this wine will fare well with fresh fruits, fruit salad with cottage cheese and honey, Pâté, cheeses, Foie gras, lobster terrine, chicken liver parfait, salty nuts, anchovy crackers, black olive tapenade, tripe, Indian, Thai, Vietnamese, Laotian, Cambodian and Chinese cuisines and salt cod.
At the end, just live at its fullest and immerse in the magic of this one of a kind delight, enjoy and cheers for life!

Vidal Grape

Classified in the Vitis Vinifera family, the Vidal varietal is the work developed by French wine breeder Jean Louis Vidal.
This grape is a hybrid and it was created to make cognac, still the discovery was that this grape under freezing conditions develops nice sweetness and fruity flavors with a moderate acidity.
