Capsicum is normally used in chinese fried rice or sweet and sour vegetables but stuffed capsicum cooked with stuffing made of various spices will give you a different taste.

Capsicum: 4 Medium size
Desiccated coconut: 4 Table spoon full
Sesame seeds: 4 Table spoon full
Tamarind pulp: 2 Tea spoon full
Salt: ½ Tea spoon
Red Chilly powder: ½ Tea spoon
Turmeric: ½ Tea spoon
Mustard seeds: ½ Tea spoon
Asafoetida ¼ Tea spoon
Cooking Oil: 2 Table spoons

1. Wash and cut the Capsicum into half and take away the seeds.
2. In one tea spoon of oil roast the desiccated coconut and Sesame seeds separately and grind it to a fine paste.
3. Add chilly powder, turmeric powder, tamarind pulp and salt to the coconut and sesame paste and mix well.
4. Fill the Capsicum halves with the mixture of paste.
5. Heat oil in a pan and add mustard seeds. When the seeds stop crackling, place the stuffed capsicum on the pan and cover with a lid.
6. Add half cup water gradually in the pan for steam to develop and help in cooking the capsicum.
7. Once the capsicum is tender and the water evaporated, take it off the fire and slowly lift the capsicum one by one and place in a flat serving dish. Pour the remaining oil with mustard seeds on the capsicum as dressing.

This can be had with Rotis, Parathas or Rice and Daal.
